The US 57mm had a shorter range but a wider field of fire, plus the ability to use AP rounds. In the beginning, the Pak 40's had a narrower field of fire but I believe had a longer range. Unfortunately, I do think that its popularity helped change it too much.
The way the different armies, just 2 at the time, had 3 different doctrines each meant you could spend ages playing different styles on different maps.
